Quick, Easy Dinners for School Nights

If your kids haven’t already started, this week marks the first days of school for you and your families. It’s funny how the start of school is something we dread all summer long; but when it finally gets here, there’s an excitement to get back into the routine, see old friends and make new ones, and finally wear those new shoes you bought!

Our summer has been an absolute crazy mess of fun and stress, and Dave and I feel lost wandering around without any kind of solid routine. We definitely work best when our days look more regular. Looking at the week ahead, I’m already thinking about the time I will be out of the house (I’m teaching part-time again this year), and how we can easily get food on the table each night as we adjust to our new schedule.

I sat down today and made a meal plan for next week and I thought I’d share it with you to take one more thing off your plate for next week. I’ve even included a shopping list so you can head out tomorrow and get exactly what you need!

Monday : Rotisserie Chicken and Sweet Potatoes

This Monday is Labor Day and we will be grilling with friends, but for the sake of using this menu any time of year, here is my choice for Monday night. Buying a rotisserie chicken in the beginning of the week is such a great idea because it’s obviously an easy dinner for that night, but you can also use the leftovers in zillions of other recipes later in the week! We like to eat our rotisserie chickens with sides like stuffing and peas, or sweet potatoes and asparagus. This week will be the latter, and other than a bit of attention to our sides, it’s an extremely easy dinner.

Tuesday: Baked Ziti and Salad

This just sounds like such a warm and easy dish for the first day of school. You could make it in a crock pot or bake it like this recipe below.  Throw together an easy salad and spend your time talking around the dinner table instead of slaving over the stove.

Wednesday: Chicken Quesadillas

I make this meal a lot because I usually always have the ingredients on-hand. For this recipe, you can use the leftover rotisserie chicken from Monday night.

Thursday: French Dip Sandwiches

Okay, true story- I’ve never made this. But HOW DELICIOUS DO THESE LOOK?? And it’s a crock pot meal! Put it in before you head to work? Maybe make some mashed potatoes (or pick up the already made ones…) and everyone is happy!

Friday: Chicken Pot Pie

I love this dish. And the first week of September calls for some comfort food right?? We haven’t eaten anything like this all summer! I don’t use potatoes for mine, just a can of veg-all, cream of chicken soup, and a cup of milk. So quick, easy and delicious.
